Click Change symbol < and then select the desired symbol in the opened scheme.
The dialog Select symbol opens.

Select the new symbol and confirm your selection by clicking OK.
A query regarding the scope of the change appears.

Click to decide whether you want to change a Single element, All elements of the family type or All elements of the family.
The assignment of the symbol has been changed for all selected instances and remains the same for future schemes of this project.
